Preparare risotto: Se calesc hasmele sau ceapa cu grasime, intr-o tigaie. Adaugati orezul crud pana devine translucid. Adaugati lichid pana cand acoperiti orezul cu vin alb sau cu o supa concentrata de carne, o supa concentrata de legume sau de peste. Aduceti la fierbere, gatiti, amestecand, pana cand lichidul este complet absorbit. Adaugati lichid (supa concentrata sau apa) de mai multe ori, in cantitati mici, si gatiti in acelasi mod, asteptand de fiecare data absorbtia completa a lichidului. Repetati pana obtineti textura dorita. Adaugati smantana, condimentati si adaugati celelalte ingrediente ale retetei alese. Parmezanul ras este adesea adaugat cu smantana pentru a-i da caracterul italian si a spori aroma orezului. Cateva fire de plante aromatice tocate pot fi, de asemenea, asezate deasupra farfuriei (arpagic sau busuioc).
